Crucial Basic Kale Chips

Most people I have met, who enjoy kale chips, have made their own batch at some point. My point in saying this, is that I am sharing my recipe for those who have never made an attempt at kale chips. It’s easy, and I’m not trying to reinvent the wheel so this is a basic recipe that yields aprox two cookie sheets full of slightly spicy and cheezy basic kale chips. Basic but truly, crucial.

You could use any variety of kale for this: curly, dinosaur, or purple kale.


  • 1/2 – 1 bunch of kale (if you use more kale, just add more seasoning as needed)
  • 2 tbsp nutritional yeast (more to taste, this adds the cheezy flavor)
  • 1 tbsp olive oil
  • pinch of salt (more to taste)
  • pinch of fresh black pepper (more to taste)
  • 1/4 teaspoon cayenne for spicy kale chips (skip this if you are not into spicy)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Preheat the oven for 300. Tear large pieces of kale from the stalk. Wash the kale under running water, then dry as best you can in a salad spinner. If you do not have a salad spinner or you cannot get the kale very dry in one, blot the kale as dry as possible with a paper towel or even a blow dryer on low speed high heat (I’m serious, it works and you want the kale as dry as possible). The kale must be dry so that it doesn’t get mushy in the oven from steaming itself. Once the kale has been washed and dried, place it into a large mixing bowl and drizzle the olive oil onto the kale.  Massage the olive oil into the kale pieces individually to make sure it is evenly distributed.

Sprinkle the nutritional yeast and spices onto the kale and mix well to evenly distribute the seasoning. You don’t want one chip with all the cayenne believe me.

Lightly oil a cookie sheet or place parchment paper on a cookie sheet. Arrange the kale pieces so that they cover the sheet without overlapping, touching edges is alright but no double layers.

Bake the sheet for 10 minutes, then remove and rotate the sheet, bake for an additional 10 minutes.

Let sit for a minute or two after you remove the sheet from the oven, removed kale chips with a spatula, now enjoy!
